Fruity and well-rounded

Mahogany colour with bronze reflections, open and fruity nose of fresh fruit (grapefruit, white pears, hints of barley sugar) and vanilla, good balance with a warm side, freshness, notes of lemon zest, molasses, then vanilla sugar. Nice lengthening rather fresh aroma which compensates for the alcoholic side. The alcohol, rather brutal, has difficulty in melting but the fruit and the typicity are well signed.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • Don Papa

    Don Papa Baroko is made on the island of Negros, Philippines. It is distilled from molasses known locally as "black gold", the black gold quo comes from one of the many local mills on the island. It is then aged for several years in American oak barrels. Our Master Blender then selects the most expressive barrels, those that reveal the strongest vanilla and fruit notes. To this blend is added a little bit of local sugar cane for gourmet flavours. It is then cold filtered and bottled at 40°. Nose: powerful, vanilla, citrus, oak. Palate: creamy, vanilla, honey, candied fruits. Finish: long, persistent, spicy oak.
