Fruity and light

Its pale colour with green reflections brings out an open and frank nose with notes of pineapple, fern and menthol. In the mouth, this wine has a nice balance, freshness and character with a cold and tense finish on iodine and mineral notes.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Composed of fossil Exora virgula, a small oyster comma-shaped, the Chablis subsoil gives the wines a unique character.

Domain and appellation

  • La Chablisienne

    Created in 1923, the cooperative Chablisienne today covers 25% of the Chablis vineyard with over 300 winemakers. Les Vaux Serene is a special edition created exclusively by the cooperative for Nicolas.
     
    • Terroir: Lying on 1175 hectares, the vineyards of the Chablisienne based on Kimmeridgian soil with alternating marl and limestone marl deposits with small oysters. The plots are on display throughout the southeast, south and southwest with a mosaic of different climates.

     

    • Viticulture: The cooperative has the particularity to reap the harvest as musts to assess immediately the quality of the various plots.

     

    • Vinification: The must is clarified or "racked" cold before its alcoholic and malolactic fermentation.
