Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

The wine can age on the lees. It means that the deposits left in the tank after the fermentation remain present during the ageing phase in order to give roundness and aromas to the wine.

Domain and appellation

  • Domaine du Prieuré d'Amilhac

    Established by the Roman Aemelius, the domain used to ship wines though amphoras in Rome 2000 years ago. The vineyard keeps thriving today between fig and olive trees.

     

    • Terroir: The 100 hectares vineyard lays on a clay-limestone soil with volcanic residues as a local specificity.

     

    • Vinification: The grapes ferment in French, hungarian and US oak barrels, and age for 8 months on the lees.
