The 1920s marked the golden age of Ayala. Supplying the royal courts of England and Spain, it ranks among the greatest houses of Champagne with a production of over one million bottles per year.
Domain and appellation
Founded in 1860 by Edmond de Ayala, the Champagne house was bought by its neighbor Bollinger in 2005. Ayala Champagne Blanc de Blancs 2005 received a rating of 89 - Robert Parker.
- Terroir: Located at Aÿ, a converging point between three parts of the Champagne region (the Montagne de Reims, the Vallée de la Marne and the Côte des Blancs), the house operates a small estate of nearly one hectare and also takes grapes from the house Bollinger. Enjoying a degraded oceanic climate, the vines are based on clay-limestone and chalk gravel.
- Vinification: This Ayala Blanc de Blancs champagne is characterized by a low dosage, about 6 grams of sugar per litre and long aging (6 years on lees).
