The rosé champagnes can be developed by bleeding but also by assembly of red and white wines. The appellation Champenoise is the only one with the right to use this process by assembling.
Domain and appellation
The champagnes Charles Laffite are part of the Vranken-Pommery Monopole group. Founded in 1976 by Paul-François Vranken, it is the second largest producer of champagne and also owns the largest vineyard in Europe, with over 7,000 hectares under control including 2,500 hectares of vineyards owned.
- Viticulture: The harvest is manual to select the best bunches and keep them intact.
- Vinification: An alcoholic fermentation of 7-15 days precedes a malolactic fermentation in temperature controlled stainless steel tanks. The Cuvée Rosé Charles Lafitte is assembled from two dozen different wines, plus 16% of Bouzy red wine. The wine is then aged for at least 24 months in the estate's cellars.
